The unexpected benefits of vinegar
In Paris, Antoine-Claude Maille Sr., a distiller and vinegar maker, created "Four Thieves Vinegar" to save the inhabitants of Marseille who were facing a terrible plague. Having discovered the antiseptic properties of vinegar, he advised them to take a teaspoonful diluted in a glass of water and rub it on their temples and palms.

Maille became a master vinegar-maker
Antoine-Claude Maille fils established himself as a "Master Vinegar Maker". In this capacity, he paid his first "union dues".

Opening of the first store in Paris
Antoine-Claude Maille opened his first shop on rue Saint-André des Arts in Paris, where one could discover the richness of his flavored mustards. He became the official supplier to the court of King Louis XV and achieved fame.

Recognition of European sovereigns
With his growing reputation, Antoine-Claude Maille became the official supplier to the courts of Austria and Hungary. He opened a new shop on the Versailles road.

Distiller and vinegar maker to the King of France
King Louis XV granted Antoine-Claude Maille the title of "Ordinary Distiller-Vinegar Maker". He now supplied the King's court daily, and no longer only on major occasions.

The House of Maille at the dawn of a new century
After selling his business in 1800 to his partner André-Arnoult Acloque, Antoine-Claude Maille Jr. left behind a wide range of products comprising 20 mustard flavors and 50 different vinegars. This variety and richness, which the Maille company has continued to cultivate throughout the ages, remains one of its greatest sources of pride today.

From fathers to sons
Robert, son of Antoine-Claude Maille, chose to take over his father's business upon reaching adulthood, refusing the capital payment owed to him. He partnered with André-Gabriel, the son of Mr. Alcoque.

Maille et Alcoque became distillers to the king and sole suppliers to the court of Louis XVIII.

Vinegar Maker of the Kings of France and England
Maille was appointed official vinegar maker to Charles X and supplier to the King of England in 1830. The following year, Maille, having just sold his shares to Alcoque, partnered with Robillard. Ten years later, in 1836, he became vinegar maker to Louis-Philippe.

Dijon becomes famous
Maille opened a boutique in Dijon, in the heart of Burgundy, a region specializing in mustard production. Located in the very center of Dijon, the boutique still welcomes gourmets from all over the world today.

Science unveils the mystery of vinegar
Louis Pasteur discovered the bacterium responsible for fermentation. Essential for vinegar production, the scientist observed that air must not come into contact with the wine during the fermentation process. Until then, vinegar production was considered a purely chemical process. Today, Maille vinegars are produced in Burgundy.

Named "Fleur de Lys" in reference to French royalty, Maille's iconic jar exists in stoneware but also in glass, adorned with a metal lid.

Maille opens a new store in Paris
To celebrate the 250th anniversary of the opening of its first Parisian boutique, Maille is opening a second location on Place de la Madeleine, in the heart of the capital's gourmet food district. Maison Maille offers a wide range of mustards, oils, and vinegars, as well as mustards freshly dispensed from a pump.
